Osteria Panicaglia is no ordinary restaurant. Within the centuries-old walls of Castello Panicaglia, you’ll taste the soul of Umbria: pure ingredients, seasonal dishes, and centuries-old traditions, all refined with a contemporary touch. Our menu changes daily, following the rhythm of nature. Every meal is a surprise – always fresh, always connected to the land. Whether you are a guest of our agriturismo or simply visiting for lunch or dinner, Osteria Panicaglia offers a unique culinary experience in a historic setting.

From our own land & local farmers

Our kitchen begins in our own vegetable garden and on the 22 hectares of land surrounding the borgo. Here we grow vegetables, herbs, and grains, produce olive oil, and make jams and liqueurs. Everything we don’t cultivate ourselves comes from small family-run farms nearby – farmers, butchers, and winemakers who remain faithful to their traditions.

Seasonal products take center stage: fresh truffles in winter, wild asparagus in spring, ripe tomatoes in summer, and chestnuts in autumn. With every dish, you savor the pure flavors of the Umbrian countryside.

Gastronomia umbra – tradition & innovation

Our chef’s dishes are inspired by the rich Umbrian culinary tradition, which dates back to the Etruscans. Pheasant, wild boar, spelt, and lentils reappear in our soups and ragùs, while pecorino, salami, and cured hams from Norcia are staples on the menu.

Regional specialties, such as truffle pasta, porchetta from the grill, and the famous saltless bread (pane sciapo), are served with a modern refinement. Children are also well catered for, ensuring everyone feels at home.

Wines & pairings

No Umbrian dinner is complete without a good glass of wine. Our wine list features a carefully selected range of Umbrian wines:

  •  Sagrantino di Montefalco DOCG – powerful, intense, and world-renowned.
  • Grechetto – fresh and fruity, ideal with lighter dishes.
  • Orvieto Classico – a historic wine, beloved by popes and artists for centuries.

Our host is happy to recommend the perfect pairing for your dish, or you can opt for a full wine pairing arrangement.

Historic atmosphere & panoramic views

Dining at Osteria Panicaglia means dining with history. The restaurant is housed in a 750-year-old castle, meticulously restored while preserving its authentic charm. Inside, you’ll enjoy a warm and stylish interior. Outside, a spacious terrace awaits with panoramic views of the rolling hills, olive groves, and the vegetable garden where your meal may have been harvested that same morning.

From an intimate candlelit dinner for two to a long family table for a group of friends, Osteria Panicaglia is a place where memories are made.

Lunch & dinner

At Osteria Panicaglia, you’re warmly welcome for an à la carte lunch or a set 3-course dinner. Would you like a longer dining experience? On request, we are happy to extend it to 4 or even 5 courses, so you can fully indulge in the flavors of Umbria. Our chef creates the dishes daily, based on the seasons and the freshest products available.

Specials & events

In addition to our daily changing menu, we also host weekly culinary evenings that have become favorites in the area:

Wednesday evening – All You Can Eat Pizza Night
Fresh from our wood-fired oven, with artisanal dough and toppings from our land and local farmers. A feast for families, groups of friends, and lovers of Italy’s beloved pizza culture.

Saturday evening – All You Can Eat BBQ Feast
A lively evening in the garden or on the terrace, with meat, fish, and vegetables from the grill, served with homemade salads and local wines. A true gathering where hotel guests and day visitors come together to enjoy.

These evenings are popular and often fully booked, so reservations are recommended.

Meet our chef

Luca Bedini has been with us since we arrived at the Borgo and knows Umbrian cuisine like no one else. On the grounds of Borgo Castello Panicaglia, he works together with our team to cultivate edible flowers and herbs. From these, we create delicious homemade products such as honey, chutneys, and vinegar. When designing the menus, Luca works as much as possible with seasonal products from our own vegetable and herb garden, supplemented by products from local farmers and businesses around the Borgo.

More than a restaurant – an experience

For us, it’s not just about dining – it’s about creating experiences:

  • Chef’s specials – new dishes every day, based on the season.
  • Workshops & tastings – learn how to make pasta, discover the secrets of truffles, or taste a selection of olive oils.
  • Meet the winemaker evenings – meet local producers and sample their wines paired with a matching menu.
  • Culinary stopover – the perfect addition to a day trip to Assisi, Spello, or Gubbio, or to a hike or bike ride through the Umbrian hills.
  • Take the flavors home – after your meal, visit our shop to take home our olive oil, jams, or liqueurs, and relive the taste of Umbria.
